His father had been producing estate bottled wines since 1964 and joined the Club Trésors in 1985 Jean-Paul has slowly developed the estate in the last 20 years to one of the very finest grower estates in the Marne. The basis for these outstanding wines are the privileged holdings in Aÿ, including the newly purchased plots in Le Léon, Mareuil-sur-Aÿ, and Dizy in the Grande Vallée as well as Avize, Oiry and Chouilly in the Côte and recently acquired vineyards in Louvois in the Montagne. Jean-Paul harvests, presses and vinifies each of his over 85 plots separately, blending sites to make harmonious wines which reflect the personality of the grower as well as the terroir. A majority of the wines are fermented in steel, though old used barrels have become a part of his program for Rive Gauche-Rive Droite and his new wine, Clos de Léon, both of which are fermented and aged in neutral barrique.

The Hébrart wines are truly of both place and person, the kind, welcoming and generous qualities that Jean-Paul Hébrart exudes can be seen in all of his Champagnes. On the palate, the wine is full-bodied, broad and vinous, with a beautifully refined mousse, superb concentration at the tightly wound core, incisive acids and a supremely elegant intermingling of Bollinger's oxidative stylistic signatures with fresh, vibrant fruit. The finish is long, precise and chalky. This is a Grande Année built for the cellar—the real excitement will come with a bit more bottle age—but this is already a thrilling Champagne in the making. Finished with eight grams per liter dosage, it was disgorged by hand in July 2018. Dried pear, dried flowers, chamomile, red plum and mint develop as the 2008 shows the breadth and creaminess that are such signatures of the Bollinger house style. A whole range of brighter, more floral and chalky notes appear later, adding translucence and energy. The 2008 is 71% Pinot Noir and 29% Chardonnay taken across 18 crus, and it is the Pinot that very much informs the wine in both flavor and texture. Pascal and Ambroise farm 10 hectares from some 60 different vineyard plots in the Côte de Blancs, including Oger, Cramant, Oiry and Avize. They prefer not to label their viticultural methods; they farm using only homeopathic vine treatments, composts, manures, and regular plowing. The Agraparts were one of the first families to bring the draft horse back to the vineyards, and named a cuvee in honor of their first four-hooved friend, Vénus. In plowing the old-school way, they expose the clay and limestone soils to immune-boosting properties of the wind and sun. While they once were the object of ridicule, they now lead a return to authentic, ancestral practices. Their quality control extends to manual harvests, a selective triage of the grapes, and the use of native yeasts during fermentation. Malolactic fermentations are employed to round out the intensity of these mineral-driven Champagnes. The wines age on their lees for an extended period of time, and then are racked to both stainless steel and neutral oak barrels—the latter being a rarity in Champagne before Pascal started using them. All wines are bottled unfined and unfiltered. Up until the time when he passed away in 1996 at the age of 96, Pascal’s grandfather, Auguste Agrapart, took great pride in hand-riddling each bottle of Agrapart Champagne. When asked for the secret to his long life was, his reply was “one bottle of Champagne a day.”

About this Wine:
This bottling no longer bears the Grand Cru designation. It is a tribute to Madame Clicquot and to the creative and elegant souls who have followed in her footsteps. A wine to reflect the image of La Grande Dame herself. Generations have cultivated the land at Ay, the family's home since the time of Apvril le Philipponnat who owned vines at Le Léon, between Ay and Dizy, in 1522. In the 16th century, the family’s ancestors were winegrowers and merchants, suppliers to the court of Louis XIV, magistrates and Royal Mayors of Ay - a town which was directly dependent on the Crown since the era of the Counts of Champagne.

Philipponnat was the first Champagne House to indicate the main year used in its non-vintage blends, the dosage and the date of disgorgement on back labels, informing consumers and wine experts of the characteristics of each cuvée.

Tasting Notes:
Salmon pink in colour with coppery glints. The first nose reveals summer berries with notes of cherry and wild strawberry. Notes of citrus and grapefruit peel develop with time. The attack is elegant and pure. First press juice of mainly Grand and Premier Crus grapes from the heart of the Champagne wine-growing area. Reserve wines (25 to 30% of the blend) are aged in wooden barrels using the solera system to incorporate older wines without losing freshness.

Vinification:
Vinified using traditional methods to avoid premature oxidation. Partial malolactic fermentation and some of the wines aged in casks to allow the aromas to develop complexity. Still red wine made from Pinot Noir grapes from Mareuil-sur-Ay and Riceys is obtained by maceration and 7 to 8% is added to obtain a delicately coloured rosé with a very definite fruity taste. Moderate brut dosage (9 g/litre) to maintain a balance between freshness, fruitiness and vinosity without masking the wine’s character and purity.

Ageing:
Aged on the lees in the House’s cellars at a constant temperature of 12°C for three years, far longer than the legal minimum requirement of 15 months.

Ratings & Reviews

94 Points – James Suckling:
"A freshness and drive to this with sliced strawberry and lime with some peach blossom undertones.
